SPINACH PANCAKES
INGREDIENTS:
- 150g frozen spinach (you can use fresh too)
- 1 CUP wholemeal flour
- 1 CUP milk (coconut, soy, almond, ...)
- 1 egg
- 2-3 cloves of garlic
- handful of chopped onion (or spring onion)
- salt and black pepper
- olive or coconut oil
- slices of ham
- mozzarella or any type of cheese
DIRECTIONS:
Thaw spinach. In a large bowl mix together spinach, flour, milk, egg, garlic and onions. Complete the mixture with a hand blender. If the mixture is too thick, pour milk until it has the perfect pancake consistency. Add salt and pepper to taste. Let the mixture rest for a while. Heat up the pan with oil and cook pancakes. You can put anything you like on the pancakes. I have added slices of ham and mozzarella and rolled them.They were delicious! :)
